Canadian Molasses Cookies

Ingredients
- 1 cup dark molasses
- 3/4 cup packed brown sugar
- 1 teaspoon cider vinegar
- 2 1/3 cups all-purpose flour
- 1 1/2 teaspoons ground ginger
- 2 teaspoons baking soda
- 1 egg
- 1/2 teaspoon salt
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, stir together the molasses, brown sugar, vinegar, and egg. Sift together the flour, baking soda, ginger and salt; add to molasses mixture. Mix until well blended. Spoon the dough by teaspoonfuls onto cookie sheets, about 2 inches apart.
3 Bake until edges are golden, 12 to 15 minutes. Let cool on pans for 5 minutes before removing.
Banana Bread
Ingredients
- 4 large, very ripe bananas
- 1 egg
- 1 cup granulated sugar
- 3 tbsps cooking oil or melted butter
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Mash the bananas well.
3. Beat the egg, sugar and oil together. Stir into the mashed bananas and beat well.
4. Mix the dry ingredients together and add them to the batter. Mix well.
5. Pour into a greased 9 inch x 5 inch x 2 1/2 inch loaf pan and bake for about 1 hours, or until a testing needle comes out clean.
This freezes very well and tastes even better after being frozen.
Canadian Pies
Ingredients
- 1/4 cup all- purpose flour
- 1 tsp salt
- 1/4 tsp pepper
- 1 1/2 lbs. boneless beef (stewing or round), cut into 1 inch cubes
- 1/4 cup vegetable oil
- 2 large onions chopped
- 2 cloves garlic, minced
- 1/2 cup chopped celery
- 1/2 lb. mushrooms, thickly sliced
- 2 cups hot beef stock 1 bay leaf
- 1 tsp. dried thyme
- 1/2 tsp. dried basil
- 2 cups cooked cubed peeled potatoes
- 1 1/2 cups sliced cooked carrots
- 1/4 cup chopped fresh parsley
- Pastry for single-crust pie or 4 oz. frozen puff pastry
Directions
1. Combine flour, salt and pepper, dredge meat in mixture.
2. In large skillet, heat oil over medium-high heat; cook meat until well browned all over.
3. Add onions, garlic and celery; cook for 3 to 4 minutes or until softened.
4. Add mushrooms, cook for 3 minutes, stirring often.
5. Stir in any remaining flour, add stock and cook, stirring, until thickened and boiling.
6. Add bay leaf, thyme and basil;cover and simmer over low heat for 1 1/2 hours or until beef is tender.
7. Discard bay leaf.
8. Stir in potatoes, carrots and parsley; transfer to 10 cup baking dish. Taste and adjust seasoning.
9. On lightly floured surface, roll out pastry and fit over beef mixture, sealing to edge of dish. 10. Cut slits for steam vents.
11.Bake in 400F oven for 25 minutes or until pastry is golden and mixture is hot.
Makes 6 servings.
Cranberry Pie

- cup water
- 3/4 cup plus two tbsp sugar
- 1 egg, lightly beated
- 1 tbsp butterpastry for 9" double crust lattice top pie
- 1 cup heavy cream
Directions
1. Cook cranberries, water and sugar about 25 minutes.
2. Allow mixture to cook and add beaten egg and butter.
3. Roll out pastry for bottom crust, place in pie pand and bake at 400 degrees for 5 minutes.
4. Remove from oven and allow to cool.
5. Fill crust with cranberry mixture.
6. Top with lattice crust.
7. Return pie to oven and bake for another 35-40 minutes at 350 degrees F.
Serve with cream.
